I am thinking about by a new server and dedicating it to hosting 3 Virtual
Servers. I am going to by it with 4 processors. 1 processor will be
dedicated to the host operating system and not do very much, while each of
the three remaining processors will host 1 Virtual Server each. But how do
I "assign" each processor to these tasks?

You can't.

BTW - you should try to use the correct terminology when posting as it
helps folks figure out what your asking. As an example, an OS that is
running under Virtual Server is not a Virtual Server, it is a guest or a
virtual machine.

You can directly allocate processors in the way of say SQL Server, but the VS
Admin website does allow you to tweak the allocation of host resources
between the virtual machines. If you set the reserved capacity for each VM to
a minimum of 100% of one CPU then I guess you'd effectively achieve what you
were trying to do.
