Risk of Sniffing?

If I were to set up a powerful server and install Virtual Server on it to
host several other 2003 servers, each of which would belong to a seperate
company, what would the risk of network traffic destined for one virtual
server being sniffed be by someone on another?

We are using switched ethernet so this cuts the risk down, but not totally.

Would a solution be to install a NIC in the physical server for each Virtual
Server? Each VS has it's own NIC connected to it's own switch? Would this
solve the problem?

Any other suggestions?
