Giving Maximum Memory to Virtual Server

I am buying a Dell R900 Virtualization Server. I placing 96 GB of memory on
it. I will be running Windows 2003 Enterprise with Virtual Server 2005.
Windows 2008 is not allowed on our network due to it not being approved (Most
MS OS's without a first Service pack are not approved)

Now inside the configuration for Virtual Server 2005 in the memory
configuration it allows for the following:

The amount of memory can be from 4 MB through 3712 MB (3503 MB is the
maximum recommended value).
Virtual machine memory (in MB): 1028

Since I will wanting to use more than 3713 MB of memory per virtual machine
what do I do (or is it only showing this since the Server only has 4 MB of
Memory)?

I mean I have 96 GB I want to use at least 1/4 of since I can have 3 host OS
according to the Windows license.

Also why is the Virtual machine memory (in MB): 1028 grayed out. Why can't
I change this?
