hi

is it possible for me to have a windows server 2003 hosted virtually
in virtual server, with two physical network cards on the host machine
so that the virtual server is bound to the single network card in a
secure manner? would this mean that all traffic would bypass the host
OS and go straight to the virtual server?

Virtual PC works the same in this regard.
If you have two physical NICS in the Host OS and you want to dedicate
one of them for use just for the Virtual Machines, unbind everything
from one of the physical NICS except for Virtual Network Services. On
the other physical NIC in your host unbind only Virtual Network
Services. Your host will send it's traffic out via the adapter with no
Virtual Network Services and your VM's will use the adapter with
nothing BUT Virtual Network Services bound to it.

There is a difference between having TCP/IP installed and whether or not it
is bound to the NIC. None of the OS' that can be used as a host allow you
to uninstall the TCP/IP stack. Also, VPC works exactly the same way as VS
does in this regard.
