cloning old production servers

Want to know if this is possible:
have several NT4 servers that have about 100gb of data. I'd like to take
them off my production servers and store them as virtual servers on another
larger Physical Box. First, can I clone NT4 servers into VirtualServer 2005
as separate Virtual Servers? Next, if that is possible, how can I manage
each of the virtual machines centrally, is that possible? Finally, since the
data on these servers are so large, is it appropriate to clone the entire
server or should I just restore the data from backup tape? Or, is there a
better way? All of these servers will still need to be operational and will
be used often
