I wonder if is a good idea install a Exchange Server 2000 in a VM Windows
2000 Server (Vserver 20005 R2) into a Win2003 R2 machine for production
purposes . My idea is keep the host Win2003 OS fresh , and get the
capability of maintain copies of the virtual disk file for disaster recovery
purposes .

The questions are :
The performance of the system (P4 3.4GHz + 2gb RAM) will be seriously
damaged ?
I will obtain a reliable configuration or increase the probability of a
crash ... ?

Last I heard and ensuring that you want the backing of Microsoft, then the
only version of Exchange supported in a virtualized environment is Exchange
2003 with Service Pack 2.

As for the questions...

1) Depends on how many users you are going to support and/or how many
virtual machines do you plan on running on this one box. Remember that
rules of sizing a VM to support Exchange isn't much different than physical
one.

2) Entirely depends on your backup/recovery plan. I can see ways that you
can ensure easier recovery time, but the expense is where the server is
offline at least once a month if you planned on backing up the VHD.
