how to use for disaster recovery?

Just typed a long message that this stupid site lost when trying to
post....so, the short question is how to use virtual server for disaster
recovery.

The admin manual recommends not copying physical start up disks to virtual
machines, so that rules out copying just about all of our physical hard
drives.

And it wouldn't seem practical to be able to duplicate our entire network as
a virtual one given the various programs, configurations, services etc.
