I am aware of the shortcut which I do use, my problem is that the max
resolution (that I am aware of) is 1600 and my screen is 1900... how can I
get the resolution of the VPC to also use 1900 pixels?

There is nothing you can do about this. You can not use that which isn't
supplied.

Start your VPC, log off, on your host pop open Remote Desktop and connect to your VPC. This will allow you to run full screen at 1900 x 1200.

Same issue here. Double monitor: 1920x1200 and 1680x1050 connected. Neither can work at full resolution with Virtual PC 2007. This is a real shame.
