Use the New Virtual Disk Wizard to create a disk greater than 16GB. Then
attach it to your virtual machine and use one of the programs Robert
mentions to transfer an image of C: to the new .vhd. You can also just
create a second .vhd for use as a data disk if all you need room for is
data.
