I have not as yet used virtual server, but i think it would be a fair
assumption to say that virtual server would use quite alot more resources
than virtual pc. On general this is the case with all server products, as
more processes and services demand more resources.

It is recommended that you host the virtual server on a computer that has as
much resources as possible, but this is not to say the virtual server would
be more demmanding than any other server.
The difference between them can be compared to the difference between a
normal operating system and a normal server. The server does more so demmands
more.

If you run a single instance of the same virtual machine under each one I
doubt that there would be much of a speed difference because they both use
the same engine to run the vm's. The problem, is they do not share common
supported guests, so neither has had thorough enough testing of the other's
supported vm's to say definitively about performance. That is, I doubt that
neither has been tweaked for the other's supported os's.

In addition, they are generally run in different environments. One has been
tested and optimized for servers and the other for clients. Logically, if
you are going to run guest server operating systems, VS should run them
better. If you are running guest client operating systems, then VPC would
be a more streamlined approach (why mess with web interface administration,
etc. and why have extra services running?).

In many enterprise and development scenarios you would want to run both VS
and VPC.

The key is that if you need Microsoft support (especially in an enterprise
environment) then run the one that has support for the guests you plan to
run.

Download them and try them in your own environment.
